podsCocoa is a brown-red powder made from the beans of the cacao tree. The sweet, hot drink called cocoa is made by adding hot water, milk and sugar to cocoa powder.

The cacao tree is an evergreen tree that came originally from the Amazonian forests. It is now grown throughout the tropical regions of the world. It grows to a height of about 25 feet, and bears yellow egg-shaped fruits about a foot long. The fruit pods contain the beans.

Workers harvest the pods and scoop out the flesh and the beans. The beans are then allowed to ferment and dry. They contain a fatty substance called cocoa butter. When they are roasted and ground into powder, a thick liquid called chocolate liquor results. Chocolate is made by cooling and solidifying the liquor and adding other ingredients such as milk solids and sugar. Cocoa powder is made by forcing the cocoa butter out of the chocolate liquor in a press, leaving behind a solid mass of cocoa powder.
