Enzymes
Enzymes are complicated chemical substances found in all living things. They act as catalysts i.e., they cause chemical reactions (changes) without being changed themselves. The changes controlled by enzymes are the biochemical ones that take place all the time in plants and animals. In fact, all the chemical processes of life are caused by enzymes. Without them, the reactions would be so slow that there would be no life.
Enzymes are specific that is, they control only one particular chemical change or type of change. An enzyme called ptyalin, for example, is found in saliva. It digests starch into a kind of sugar called maltose.
